The room
The Victor borrows its look from Queen Victoria's era: ornate fixtures, heavy oak tables and green leather banquettes that the restaurant compares to London's House of Commons. You can eat at the bar, at velvet chairs under an open atrium, or in a private room next to the wine cellar, which has marble floors, gold sliding doors and its own audiovisual set-up. The restaurant lists views of the Pacific, the downtown skyline and the sixth-floor park.
The food and the drink
The menu is a modern surf and turf: fresh Pacific Northwest seafood, a selection of specialty steaks, and a sushi and raw bar. The drinks list leans on champagne, local craft beer and what the restaurant calls one of Canada's largest in-house Enomatic wine systems, which keeps opened bottles fresh so more wines can be poured by the glass.

The chef
The restaurant's page says Garett Blundell started at Arbutus, the restaurant of Brentwood Bay Lodge near Victoria, cooking West Coast fine dining. He then spent a year in London in Michelin-starred kitchens, Maze by Gordon Ramsay among them, and worked in the Caribbean and in Vancouver before taking over here.
Is it any good?
We have not reviewed the food on a plate, and we will not pretend we have. The restaurant quotes OpenTable and the Vancouver Sun naming it one of Canada's top 50 hotel restaurants. Treat that as the restaurant's own selection of praise.
How we would use it
Book the 5 p.m. slot on a show night. You get the room while it is light, the park outside the window, and enough time to walk to BC Place or Rogers Arena for a 7 or 8 p.m. start. Say at booking that you have tickets; a kitchen that knows the clock is a kitchen that can pace the courses.
On a quiet Sunday, the brunch is the other way in. After the show the night before, 10 a.m. is early enough.
